Description

Preheat the oven to 350 degrees & line 2 baking sheets with parchment paper.

In a mixing bowl, add the olive oil, balsamic vinegar, vanilla, both sugars, & 1 teaspoon of salt to a large mixing bowl. Mix until you have a smooth consistency. Now mix in the egg. Blend until it's completely smooth again. Add the flour & baking soda to the bowl and mix in the chocolate chunks and optional walnuts.

Grab about 2 tablespoons of dough with your hands and shape into balls. Add dough to the parchment-lined baking sheets & have at least 2 inches between them, about a dozen per sheet. Gently fflatten the balls of batter about halfway & then lightly sprinkle each one with flaky salt.

Bake for 12 minutes until the cookies are golden brown and let cool on the baking sheet for about 5 minutes.
