Instructions

  1. Cook box of pasta according to directions on the box. While cooking preheat oven to 400 degrees.
  2. Grab a parchment lined baking sheet and place eggplant and zucchini onto pan. Toss with 2 tablespoons olive oil, garlic salt, and pepper and roast for 15-20 minutes.
  3. Grab a large bowl and add pasta, zucchini, tomatoes, eggplant, and remaining olive oil. Serve hot or cold!
