Make the dressing. Mix the oil, balsamic vinegar, cumin and salt and pepper all together and set aside.

Prepare all your ingredients for assembly.

Add the kale, green cabbage, cucumbers, celery, apples, pistachios and pumpkin seeds all together in a bowl or large platter. Pour over your homemade dressing and toss all together. Serve right away.
