Instructions

  1. Cook pasta, drain, and set aside.

    Reserve 2 cups of pasta water before draining.
  2. Heat olive oil and add the onion and garlic.
  3. Sauté for 5-8 minutes. Add tomato paste and cook for a further 2-3 minutes.
  4. Add in vodka and pumpkin puree and mix well.
  5. Add the heavy cream, pasta water, and parmesan cheese and stir.
  6. Cook 5-7 minutes until sauce thickens.
  7. Toss in cooked pasta and mix.
  8. Top with more parmesan cheese if desired.
