Cook pasta, drain, and set aside.
Reserve 2 cups of pasta water before draining. -
Heat olive oil and add the onion and garlic.

Sauté for 5-8 minutes. Add tomato paste and cook for a further 2-3 minutes.

Add in vodka and pumpkin puree and mix well.

Add the heavy cream, pasta water, and parmesan cheese and stir.

Cook 5-7 minutes until sauce thickens.

Toss in cooked pasta and mix.

Top with more parmesan cheese if desired.
