Made this for New Year’s Eve for my family and friends using my favorite Sfoglini pasta! Since some friends are gluten free I left the pasta on the side and people added it as wanted. It also keeps the pasta from getting mushy for leftovers the next day!

Ingredients

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté for 5-7 minutes until softened.
  2. Add garlic and green beans. Cook for 3-4 minutes.
  3. Stir in diced tomatoes, vegetable broth, kidney beans, cannellini beans, and Italian seasoning. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
  4. While soup is cooking cook pasta according to instructions on the box, strain and set aside.
  5. Season with salt and pepper. Add as much pasta to each bowl and/or pot as desired. Serve hot, garnished with Parmesan if desired.
