Brush the prime rib with a thin layer of Dijon mustard. Sprinkle garlic powder and black pepper over the surface. Heat a pan or your grill to medium heat and cook prime rib to medium rare or your liking temperature.

Press the chopped pistachios firmly onto the mustard-coated prime rib slices. Place the encrusted slices on a baking sheet and warm in the oven for 5-10 minutes.

In a small bowl, mix olive oil, balsamic vinegar, garlic, salt, pepper, blood orange juice, and honey.

Arrange mixed greens on a large platter or individual bowl. Top with avocado, sliced cucumber, slices of pistachio-encrusted prime rib and blue cheese crumbles, (if using).
