Mix all the ingredients under "chicken marinade" together and toss the chicken thighs well. Set aside while you prepare the vegetables. I like to let the chicken sit for at least 30-45 minutes to let everything really marinade. If you have the time, let it sit overnight.

Preheat oven to 425 degrees and line a baking sheet with parchment paper.

Add all the vegetables on the sheet pan and toss them in garlic, oil, salt, and pepper. Mix well and transfer to the prepared baking sheet and make sure they are spread out evenly in one layer.

Place the marinaded chicken thighs on top of the vegetables and bake for 35-45 minutes or until the internal temperature of the chicken reads 165 degrees.
