Butternut Squash Panzanella Salad

This panzanella salad offers you a great way to use up some of your stale(ish) bread that you might have leftover from Thanksgiving! It’s also an excellent way to use seasonal produce, such as butternut squash and pears, while adding a festive twist with a cranberry vinaigrette. The crunchy croutons complement the texture of the roasted vegetables, making it a hearty, yet refreshing, salad for any occasion. Best served fresh so croutons still have a little crunch to them.

Preheat oven to 400º. Place butternut squash cubes on parchment lined sheet pan. Drizzle with olive oil, sprinkle with salt and pepper. Toss to coat. Roast in oven for about 45 minutes or until squash is tender, but not too mushy.

Place bread cubes on a separate parchment lined sheet pan. Drizzle with olive oil, sprinkle with salt and pepper. Toss to coat. Roast in oven for 10-15 minutes or until bread cubes are crisp to touch.

Finely chop shallot and place in small bowl. Add vinegar, olive oil, ground ginger, salt, and black pepper. Mix all together and let sit for 15 minutes.

4. In large bowl combine roasted butternut squash, mushroom sage croutons, pears, dried cranberries, and pepitas. Top with vinaigrette and toss to coat.
