Salads in the summer are simply incredible because they are full of fresh ingredients & can be served cold as a nice cool down meal to beat the heat. Salads are great as a side dish, but also easily made into a meal with some protein added on top like chicken, shrimp, or steak.

Add all the ingredients for the dressing into a blender or food processor and blend until smooth.

In a pan over medium heat add olive oil and shrimp. Cook 2-3 minutes on each side and sprinkle each side with fresh basil.

Add spinach and lettuce to a large bowl. Layer on the strawberries, avocado chunks, red onion, feta, nuts & pumpkin seeds. Toss with dressing and enjoy.
